Peanut noodles & tempeh (Vegan, GF)

The first time I tried these two recipes they blew my mind! It's not very often that a recipe has the measurements nearly perfectly balanced but these two recipes from a virtual vegan and minimalist baker definitely nailed the peanut sauce! I've made this recipe quite a few times and can almost guarantee you won't regret it. Check it out.
Maybe one day I'll become better at photography, but until then you'll have to trust me on the taste. Looks can be deceiving!!
Peanut noodles & tempeh
Prep time: 10 minutes
Total time: 30-40 minutes
Servings: 4 servings
Ingredients
Noodles
6-8 oz of noodles (I used spaghetti cause I didn't have other noodles so you can be flexible!)
½ cup natural peanut butter smooth or crunchy
½ cup water
3 Tbsp soy sauce gluten-free, if preferred
2 cloves garlic
2 tablespoons fresh lime juice , 1 lime
1 tablespoon agave or maple syrup
1- inch piece fresh ginger
1 teaspoon sesame oil , omit to make oil-free
Tempeh
1/2 bell pepper cut in slices
1/2 onion cut in slices
1 tbsp avocado oil

Instructions
Prepare your tempeh by following the guidelines in the website linked above. I do not always have time to marinate the tempeh so I often bake it right away and add a bit of sauce to it when I take it out of the oven. I also omit the bird's eye chili.
Put some water to boil for your noodles and add a sprinkle of salt to the water.
While your tempeh is cooking and water is boiling, prepare the sauce for your noodles by adding all the noodle ingredients except the noodles to a blender and blender at high speed for 1 minute. You should get a smooth creamy sauce for your pasta. Adjust the taste, more soy sauce for saltier, more peanut butter for a stronger peanut taste, more lime/maple if it's too salty and more maple/lime to balance the flavours.
Once the water boils cook your noodles according to the packages directions.
You can stir fry some bell pepper and onions and add it to your tempeh once it's ready.
Once all is ready, mix the pasta with your sauce and add the tempeh mix to it.
